Sun Cookies
6 tablespoons pure maple syrup or raw honey
1 egg, beaten
1/2 teaspoon salt
1/2 teaspoon baking soda
1/8 teaspoon Pure Monk Fruit Sweetener or stevia to taste
1 cup unsweetened sunflower seed butter (like sun butter)
Preheat oven to 375°F. In a medium bowl, stir together syrup, egg, salt, baking soda, and sweetener of preference. Stir well. Add seed butter and mix until your batter is fully combined and starting to thicken. If you want to increase sweetness, add the stevia or Lo Han to taste.
Dollop about 1 tablespoon of batter per cookie onto a parchment covered cookie sheet. Bake for 15 to 20 minutes until golden brown. Slide parchment paper off cookie sheet and allow cookies to cool.
Modification Option: L1/LS – If you are not sensitive to peanuts you can substitute organic Valencia peanut butter instead of seed butter
